This four-hour fruit cake baking course offers a relaxed and enjoyable way to learn the essentials of making a classic cake from scratch. It starts with a friendly introduction to the ingredients and tools, focusing on a method that keeps things simple and accessible. While the cake bakes, you will explore baking tips and take part in group discussion on how to avoid common mistakes. Once cooled, the cake is decorated with easy touches like a glaze or a dusting of sugar. The course will end with a tasting session and ideas for personalizing the recipe, making it a satisfying and approachable experience for anyone interested in home baking.

Seasonal bread baking masterclass, cozonac holiday bread and stollen
This seasonal bread-making masterclass celebrates the joy, heritage, and tradition of baking, focusing on two rich and meaningful breads: Romanian Cozonac and German Stollen. Both deeply connected to winter celebrations, these breads offer a window into how different cultures mark the festive season through food made with care, patience, and love.
Learners will develop practical baking skills as they prepare, shape, and bake these enriched doughs, while also exploring their origins and significance. From the sweet, walnut-filled Cozonac enjoyed during Romanian holidays to the fruit-studded, spiced Stollen traditionally made in the weeks leading up to Christmas in Germany, each recipe tells a story of place, time, and tradition.
This course nurtures a genuine appreciation for bread making encouraging learners to connect technique with culture, and to understand how seasonal ingredients, family customs, and history shape what we bake. It is designed to inspire confidence, curiosity, and a lasting love of baking.

How to enrol
After you’ve chosen which course you want to do, you need to enrol. You should enrol before the course starts to make sure you get a place.
You can enrol up to three weeks after the start date if there are spaces available.

Requirements
If this is your first enrolment you’ll need to provide proof of identity. We will accept a photo of one of the following:

- driving licence

- birth or adoption certificate
- National Insurance card
- credit or debit card
- recent utility bills or bank statements
- Freedom Pass
How to enrol if you get reduced fees

If you’re entitled to reduced fees, you can enrol online, but you’ll need to pay for the course then claim a partial refund – you can do so by sending copies of any benefits you’ve claimed in the last three months to adultlearning@lewisham.gov.uk.

Learning aims
- Develop foundational cake-baking skills. To understand and apply a simple, accessible method for producing a traditional fruit cake from scratch using the correct ingredients and equipment.
- Build confidence in preparation and finishing techniques. To practise safe preparation, baking, and basic finishing methods such as glazing or dusting to achieve a well-presented cake.
- Increase knowledge of baking processes and problem-solving. To identify common baking mistakes and explore ways to avoid them, while sharing ideas and adapting recipes for personal use at home.
What prior knowledge do I need
No prior knowledge or experience is necessary to enrol on this course. Please be advised that some learners who enrol will have more experience than others.
A basic level of English, Maths and computer skills would be useful.
What teaching methods
The tutor will use a range of teaching methods during the course which will include the following: Demonstration - both group and individual, one to one tuition, group work, assessment of progress, observation, discussion/question and answer sessions.
What assessment methods
The course tutor will use a range of methods to assess progress on the course. These may include observation, completion of an Individual Learning Plan (eILP) which will be updated regularly, evaluation of work samples, question and answer sessions, photographs of projects to record achievement presented on our virtual learning environment (VLE).
Extra work
You will be encouraged to access our virtual learning environment all.lewisham.gov.uk (VLE), take part in course forums and various online activities provided by the tutor.
Materials needed
Learners will be expected to purchase the ingredients before the lesson.
Ingredients:
1 kilogram mixed dried fruit
300 grams self-raising flour
3 large eggs
150 grams brown sugar
150 grams butter (softened)
1 teaspoon mixed spice or cinnamon (optional)
What to bring
The ingredients list required will be sent out to you a week before the course. Read the list and instructions carefully as some preparation maybe required. Please bring a container, cling film, apron or overall, a notepad and pen, tea towel and dish cloth.
NOTE: You will be given a 1 hour break, please bring a packed lunch or make arrangement to purchase something locally. We cannot gurantee that our cafe will be open.
After completion

- Build confidence in baking a sponge cake. To successfully produce a light and moist sponge cake using the correct ingredients and methods.
- Develop skills in filling and decorating cakes. To create a cookies-and-cream style buttercream and assemble and decorate a cake using simple techniques, including a KitKat finish.
